Weekend is here and so is the awesome weather ! I have a reason also to celebrate and wanted to share with all you lovely readers.. drum roll please….. I got a promotion last week at work .. exciting news right !! so made this mug cake for celebrating. This is the first time I made a mug cake and that too in a microwave as I always doubted the sponginess and softness of the cake.But to my utter surprise this Eggless Vanilla Funfhetti Mug Cake turned out to be one of the most spongy cake I have ever made.
I made it eggless as most of people in India avoid eggs and non-veg during the holy month of “Saavan”.So this is my treat for all the lovely people who are following it.By the way I am hardcore non vegetarian and I use eggs in all my cakes but I am so glad that I tried this egg-less version coz me and hubby loved it.
In the picture above you can see the colour and texture of the cake when it comes fresh out of the oven.I have used whipped cream and dusted some cocoa powder on the top but you can also enjoy it without any topping as it is super tasty.It is light and fluffy unlike other mug cakes which are either hard or uncooked most of times.I have also used funfhetti in this recipe and if in case you are not having funfhetti at home then you can either add choco chips or some raisins as possibilities are endless.And you know what this takes less then 10 minutes to make this right from the prep to baking the final dish.You can also make individual mug cakes if you are having some guests coming over.Just pop the mug in the oven and within a minute and few seconds you can surprise them with this and win everyone’s accolades.
